Happy Saturday, everyone! Who’s running long or racing this weekend?
I have my first 15-miler today to top off a 56 mile week. It’s both my longest run to date and my highest mileage week—wish me luck!
This week’s Reads and Recipes are going to fall more into the recipes side of things that the reads. Since it’s currently impossibly hot here in Seattle, I’ve been sticking to lazy meals and living vicariously through all my favorite food blogs.
And since the”impossibly hot” temperatures peak in the low-90s, you can clearly tell I’ve acclimated to the Seattle weather. I don’t know how the rest of you do it.
How adorable and delectable are these Easy Avocado Boats from Minimalist Baker? Like, these have all the best parts of Mexican food all rolled up into one vegan and gluten free dish.
I haven’t tried zoodles yet, which is almost inexplicable due to my borderline obsession with zucchini. Maybe I’ll start with Food Faith Fitness’ Sun-Dried Tomato Greek Yogurt Chicken with Zucchini Noodles because oh-my-yum does that look good!
Don’t stop at zoodles! With zucchini and summer squash only in season for a few short weeks, make the most of them with meals like this Pesto Summer Squash Bruschetta with Poached Eggs from Naturally Ella.
As a girl who prefers her margaritas salty over sweet, I’m drooling over How Sweet It Is’ Salted Watermelon Margarita Popsicles. Here’s the only problem: they may not make it into popsicle form if I was to make them.
Craving chocolate (and if you’re not, can you please tell me your secrets?)? Try this light and healthy Chocolate Almond Smoothie from Hummusapien to satisfy your sweet tooth!
For more chocolate fix, check out these Flourless Double Chocolate Hazelnut Cookies with Sea Salt from Ambitious Kitchen. I’ll take two, please.
Dig into a big bowl of nutrients and tastiness with this Easy Superfood Quinoa Bowl from Gimme Some Oven. Or, if you’re not a fan or burnt out on quinoa, try it with farro, teff, or brown rice.
So many of you commented on Thursday’s and yesterday’s posts about your love for ginger, so here’s another ginger recipe for you: Salmon and Ginger Teriyaki Stir Fry from Eat Spin Run Repeat. I love everything about this meal, from the tahini in the sauce to all the vegetables to the ginger-flavored salmon.
Or, if stir fries aren’t your thing, add a punch of flavor to your salmon with this Corn Salsa Salmon recipe from The Almond Eater.
I love all the bright colors and vibrant flavors on Eating Bird Food’s Antioxidant Salad with Blueberry Tahini Dressing. Such a pretty and healthy salad!
And the colors of the potatoes in Edible Perspective’s Avocado Dill Vegan Roasted Potato Salad? Amazing. I love purple potatoes and the only way I can think to make them more amazing is by adding avocado.
Scared to make scallops at home? No fear—Lindsay Cotter at Cotter Crunch is to the rescue with these simple One Pot Steamed Garlic and Herb Scallops with Veggies.
I can’t get over the genius of Roasted Root’s Roasted Portobello Mushroom B.L.A.T. with Pesto Sauce. Bacon, lettuce (arugula), avocado, and tomato served over a meaty mushroom? Too good to be true.
Craving cookies but don’t want the temptation of a dozen or more? Try these Paleo and gluten free Small Batch Chocolate Chip Cookies from the Lean Green Bean!
