I know I post a lot of vegetarian recipes here, but I also eat beef, chicken, fish, and pork regularly. Years ago, I tried being a vegetarian and then tried eating only fish and chicken, no other meats. It just didn’t work for me for several reasons (hello, anemia). I’m not a huge fan of kale (burning some kale chips can do that to you), but How Sweet Eats says this Arugula Kale Reggiano Salad will convert kale disdainers like myself and I just may try it. Other than the kale, everything on this salad is insanely delicious: arugula, avocado, berries, and lots of cheese.
I want to make these Healthy Zucchini Muffins from Gimme Some Oven, but something makes me think they will disappear in two days max and I’ll just be wondering where all the muffins went. Is there a better summer muffin than zucchini?
