15 Squash Recipes to Enjoy This Fall

First off, thank you all so much for the best wishes and supportive words on yesterday’s blogiversary post! 

Over the past year I shared several recipes on this blog – vegetarian meals, breakfasts, breads/baked goods, and even some meat dishes. Many of the recipes I create are seasonal recipes, featuring the produce and flavors of that season. 

Yes, I acknowledge that fall does not meteorologically begin with September and Labor Day weekend. Although fall weather arrived right on time here in Seattle, so it certainly feels like fall outside. Regardless, the start of September awakens my cravings for all fall foods: pumpkin, butternut squash, acorn squash, spaghetti squash…alright, almost anything squash.

I mean, who doesn’t love squash? For us runners, it’s almost like it’s creation’s gift for racing season. Not only does squash taste good, but it’s full of the nutrients our bodies need when training hard. 

Squash provides starchy carbohydrates (excellent for marathon and half marathon training!), vitamin A, vitamin C, magnesium, potassium, manganese, vitamin B6, and other vitamins and minerals. It’s an excellent way to eat more carbohydrates to fuel long-distance running while also consuming one of your 6-9 vegetables and fruits per day. 

Another reason to include squash in your diet? It’s budget-friendly, versatile, and sustainable. Winter squashes can take on sweet, savory, and spicy flavors. This versatility makes it easy to sneak into meals that otherwise lack vegetables, such as breakfast or a mid-afternoon snack. 

So to prepare you for the squash-filled seasons ahead, today I’ve rounded up my recipes featuring acorn squash, butternut squash, spaghetti squash, kabocha, and pumpkin for your enjoyment this fall.

    Great collection of recipes! I roasted a spaghetti squash last night to use for dinner tonight. I also love butternut squash, especially in the fall!

    I do love some squash! Although I’m kind of stuck on the summer variety still. It’s not feeling too fall like here in NH so I’m still all in for summer. But when things change…watch out! Pinning for future reference!

    I love squash. Squashy squashy squash 😀 If only they could coexist more peacefully with stone fruits and summer produce. Then my life would be complete.
