Crispy Chickpea and Sweet Potato Salad

Ingredients
  

  • 1 large sweet potato cut into cubes
  • 2 cups cauliflower chopped
  • 1 sweet onion sliced
  • 1 cup chickpeas
  • 2 tablespoons olive oil
  • 2 teaspoon ground sage
  • Salt and pepper to taste
  • 2 tablespoon feta

Instructions
 

  • Preheat the oven to 450 degrees.
  • Add the cut vegetables and chickpeas to a roasting pan and toss with olive oil.
  • Season with sage, salt, and pepper.
  • Cook for 25-30 minutes.
  • After removing from oven, divide onto bowls and top each with one tablespoon of feta.
