Greek Yogurt Chocolate Chip Pancakes

Ingredients
  

  • 1/2 cup of old-fashioned oats
  • 2/3 cup of whole wheat flour
  • 2/3 cup of milk
  • 1-8 oz. container of fat-free plain Greek yogurt
  • 1/2 tsp vanilla
  • Dash of salt
  • 2 ½ tsp baking powder
  • 1 egg
  • ½ cup of chocolate chips
  • 1 tsp butter to lightly coat the pan

Instructions
 

  • Combine the oats, flour, salt, and baking powder in a bowl. Add the milk and Greek yogurt; gently mix for a few stirs (do not fully combine the ingredients). Then add the egg, mix until just combined. Stir in the chocolate chips (be careful not to overmix).
  • Heat a griddle or skillet over medium; melt a tiny bit of butter to coat the pan. Pour batter into pan - I like to use an ice cream scoop to distribute out the batter. Flip the pancakes when they are firm around the edges and starting to bubble on the inside. Cook for a couple minutes on the other side, until golden brown.
