Bring the water or milk to a boil in a saucepan on the stove.
Once the water boils, add the oats and reduce to a simmer. Let the oats cook for 5 minutes.
Shred the zucchini in a food processor, with a grater, or finely with knife, and stir into the oats. Let cook for 1-2 minutes. Meanwhile, chop the apple.
Crack the egg into the oats and whisk steadily for 30-60 seconds or until completely cooked.
Season the oats with cinnamon, ginger, and salt.
Stir in the apple and chia seeds. Remove from heat and serve immediately.
Notes
Recipe is easily scaled to serve 2 or more people. Golden delicious and Granny Smith varieties of apple work best in this recipe.
