Pumpkin Spice Whole Wheat Chocolate Chip Cookies

Ingredients
  

  • 4 tablespoons unsalted butter softened
  • 2 tablespoons unsweetened natural applesauce
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon vanilla
  • 2 teaspoon pumpkin pie spice
  • 1 large egg
  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup semisweet chocolate chips

Instructions
 

  • Preheat the oven to 375 degrees.
  • Using a mixer or a whisk, beat the butter and applesauce until creamy.
  • Add the sugars to the bowl and beat until smooth, about 2 to 3 minutes.
  • Add the egg, vanilla, and pumpkin pie spice and mix until smooth.
  • In a separate bowl, mix together the flours, salt, baking powder, and baking soda.
  • Slowly add the dry ingredients to the butter-sugar-egg mixture and mix together until well combined. Evenly stir in the chocolate chips.
  • Use an ice cream scooper or a tablespoon to divide the dough and shape the cookies. Place the cookies on a lined cookie tray with space between each cookie (the cookies will expand as they bake).
  • Bake in the oven for 12-15 minutes or until the cookies are golden in color.

Notes

You can also make a giant chocolate chip cookie cake out of this recipe. Simply bake on a round pizza sheet and increase the baking time to 15-18 minutes.
