Preheat the oven to 375 degrees.
Using a mixer or a whisk, beat the butter and applesauce until creamy.
Add the sugars to the bowl and beat until smooth, about 2 to 3 minutes.
Add the egg, vanilla, and pumpkin pie spice and mix until smooth.
In a separate bowl, mix together the flours, salt, baking powder, and baking soda.
Slowly add the dry ingredients to the butter-sugar-egg mixture and mix together until well combined. Evenly stir in the chocolate chips.
Use an ice cream scooper or a tablespoon to divide the dough and shape the cookies. Place the cookies on a lined cookie tray with space between each cookie (the cookies will expand as they bake).
Bake in the oven for 12-15 minutes or until the cookies are golden in color.
