Happy Sunday! Today I’m linking up with Jill Conyers and Mommy Run Fast to share with you my meal planning and weekly eats from last week.
Breakfast
The usual: oatmeal on the weekdays, our favorite pancakes on the weekends. I never get bored of oatmeal because I vary my toppings based on what is in season. Currently, I’m obsessed with peaches and chia seeds on my oats.
Lunch
As usual, I’ve prepped homemade breads and chicken to pack lunches for Ryan each day. As for my lunches, I’ve been really enjoying salads with beans and roasted vegetables and stuff sweet potatoes. My best lunch this week was a roasted vegetable salad with a roasted garlic white bean dip!
Dinner
Monday: Breakfast for dinner: eggs, red potatoes, green pepper, and organic sausage, with whole wheat biscuits.
Tuesday: Fish (cod) tacos with cabbage, grilled corn and tomatoes, and cilantro on homemade whole wheat tortillas.
Wednesday: Leftover fish meant more tacos! This time with avocado, cabbage, cilantro, and tomatoes.
Thursday: Brown rice risotto with organic sausage and roasted broccoli.
Friday: Homemade pizza with shallots, organic sausage, and green pepper and side salads.
Saturday: Petite sirloin steaks, red potatoes, and broccoli on the grill
Sunday: Salmon and roasted vegetables
As you can see from the photos, we’ve been loving this mild weather and eating on our patio almost every night.
For meals this week, I baked a batch of whole wheat biscuits on Sunday and whole wheat tortillas on Tuesday, which lasted us throughout the whole week. I also cooked up a batch of stock from last week’s chicken early in the week and used some for the risotto and froze the rest.
We also enjoyed some refreshing Oregon pale ales. These beers (from the Deschutes Brewery in Bend) are unpasteurized, which means the fermentation has not stopped and they offer the same gut-friendly benefits as kombucha and other fermented foods. At least there’s some health benefits to our favorite everyday indulgence!

I never thought of making a salad with roasted veggies! I am in such a lunch rut so I will definitely try that idea soon 🙂
We love fish tacos too… such a great easy summer meal.
Salads with roasted veggies are so good! I find warm food so satisfying so it helps give more of a filling feeling to salad. I hope you enjoy them if you try them! 🙂
i have a horrible sweet tooth so I have to have at least one indulgence a day like a cookie at lunch or a little ice cream after dinner. Mega stuffed Oreos are my downfall so I don’t let myself buy them very often, haha!
That’s how I am with chocolate! I let myself have a little each day, but sometimes I just let myself indulge in the sweets that are my downfall (peanut butter M&Ms!)
